Veggie Skewer

Veggie Souvlaki
  • 1 zucchini, cut into 8 slices

  • 1 large onion, cut in 8 pieces

  • 1 oblong eggplant, cut into 8 slices

  • 3 colored peppers, cut into 8 pieces

  • For the marinade

  • ¾ tea cup KORVEL extra virgin olive oil

  • 1 clove garlic, crushed

  • ½ lemon (juice)

  • ½ Teaspoon Thyme

  • ½ Teaspoon Oregano

  • Salt – pepper

Wash and dry the vegetables.

Then pass the skewers alternately and when finished, put them in a bowl and pour the marinade.

Leave them in the marinade, at least 1 hour.

Then bake the vegetables skewers on the grill until browned from all sides.

Finally, we make a mustard sauce by hitting wet mustard, KORVEL extra virgin olive oil, lemon, oregano, salt and pepper.

Pour and serve.
